This is probably the easiest thing I will ever post. Pasta and yogurt may sound weird, and maybe I just like it because I grew up eating it. Often my mom would make Orzo and just spoon a dollop of yogurt on top and we were good to go.
But I will say my taste testers liked it too, so I am going with it is good. The best part, it is so simple, calling it a recipe is a struggle, I don't even have measurements. There can be as few as three ingredients, pasta, yogurt, salt. Or you can add things, like olive oil, garlic and red pepper flakes like I did. I hope you give this one a try!
Extremely thankful to Kristland Lee for taking pictures

While your pasta is cooking (in salted, boiling water) in a pan warm your olive oil, garlic and red pepper flakes until fragrant, turn off so it doesn't burn. This can be done in the same pot as the pasta was cooking in, if you decide to drain your pasta in a colander. If you do this, reserve some of the pasta water to loosen up the dish later.
Once the pasta is cooked transfer to pan with olive oil, garlic and red pepper flakes.
Add in the yogurt and stir to combine. I like to use regular yogurt (not Greek) Trader Joe's has a lovely European Style Yogurt that is great, but any kind will do. If using Greek yogurt, add in some of the pasta water to loosen it up.
Top with some herbs and enjoy!
