Spinach is one of my favorite vegetables and it is so easy to make! You probably don't need a recipe for sauteed spinach, but since my next post is going to be roasted chicken and I usually serve sauteed spinach with the chicken - I wanted to have a recipe for it! Now that you know my thought, process here is are the ingredients:

2 pounds of spinach, washed
1 tablespoon olive oil
2-3 gloves of garlic thinly sliced or minced
1 pinch of red pepper flakes (optional)

Sometimes, actually usually, I mince up the garlic but I guess this day I felt like slicing, either way works.
Put some oil in a pot or pan and add the garlic and red pepper flakes.
Allow them to cook for a about a minute. This will help flavor the oil, be careful not to burn the garlic or it will become bitter.
Fill the pot or pan with spinach, don't worry about it being a lot - spinach shrinks while cooking.
After a minute or two with tongs flip what is on the bottom of the pan to the top. This will also help the garlic from burning on the bottom of the pan.
Add some more spinach, and repeat the flipping process.
Flip a few times until it is all wilted, season with salt. Serve and enjoy!
Variations:
Add some chopped onion or shallots with the garlic, red pepper and olive oil. Allow it to cook for a few minutes until soft before adding the spinach.
Use butter instead of olive oil.
Finish the spinach with a squeeze of lemon juice.

In a big pot or pan add enough oil to cover the bottom. Turn the heat on medium, add garlic and red pepper flakes. Allow to cook for a minute or too being careful not to burn the garlic. Add half of the spinach, allow the bottom to wilt, then mix the spinach to bring what is on the bottom to the top. Add the other half of the spinach and repeat flipping process every few minutes until all the spinach is cooked. Season with salt to taste. Serve and enjoy!
